I can't seem to be vegan yet despite all the great runners who are!   But I came across this article on my favorite breakfast and feel a little better about eating it almost everyday.

For everyone like me who hasn't made the switch to vegan yet...what is the verdict on eggs?  I run about 4 miles every other day and am working on building up...is an egg omelet with onions and spinach (or any other veggie) a good start to the day?

  • I'm a big egg fan too! My body has transformed over the past year. My diet is very similar to paleo, I find I don't 100% agree to any one diet plan. I do 100% agree with need to eliminate sugar and white flour (sorry had to get my opinion in there). I have 10 times more energy than I ever had. I don't recognize the girl in the mirror any more...she looks like an athlete now....and my diabetes is in remission.

  • I love eggs and my body feels so good with them in my diet.  Don't get stuck into "needing" to place a label or a name to your diet.  Once we do that we lose the ability to be aware and learn what is best for us.  Keep learning what works for you!

    Eggs are awesome and form a large part of my diet. In January 2011 I was toying with a switch to veganism. Somehow I stumbled across the paleo diet and took the thirty day challenge. I have never looked back and find myself 30 lbs lighter and running with more energy than I have had in years. Turns out that the vegan and paleolithic diets boast some of the same benefits, mostly because they avoid the same culprits. (btw, never have had to give up wine and a few other choice goodies)

    Eric's training plans are designed to utilizing fat burning systems in our body and it fits perfectly with paleo (meat eating vegetarian as I like to call it) lifestyles.
